Homemade chokeberry liqueur
Ingredients per 5 L of homemade aronia liqueur:
- 3 kg of chokeberries
- 5 litres of 50-60% alcohol
- 1 kg of sugar
- 100-200 ml of cherry syrup (high quality)
- 1 ml of Pektoenzym, reducing viscosity and making clarification smoother, keeping pectin from coagulating (not mandatory)
Recipe: Put chokeberries for at least a week in a freezer, douse with lukewarm water and put all in a vessel that can be tightly sealed, like a jar. Cover the berries with sugar and pour alcogol over. After 3 weeks, add cherry syrup for flavour. Leave all for 3 more weeks.
Strain the fruit and give liqueur time to clarify (about a week)
Protip: Can be consumed before clarification as well.
