Homemade fermented beets

Fermented red beets are the perfect base for borscht, and a tasty, healthy addition to many salads and meats. This simple, quick recipe will let you prepare a ferment that will be ideal in the kitchen during the autumn–winter season. How should you prepare beets for fermentation? Recipe for homemade fermented beets

Preparation:

Peel the beets and cut them as desired (e.g., into slices or cubes). Pack them tightly into a jar. Slice the garlic clove. Prepare a slice of onion, a 3 cm slice of horseradish root, 3 slices of carrot, and 1 dill flower head (or a level teaspoon of dried dill). Put all these ingredients into the jar with the beets. Then add 4 allspice berries, 5 black peppercorns, 10 mustard seeds, 2 bay leaves, and a pinch of cardamom to taste. Prepare a hot brine and pour it over all the ingredients. Seal the jar tightly.

Note!

After 24 hours, fermentation will begin. For 3 days, gently loosen the lid once a day (so that the gas can escape). Once the gas has been released, tighten the lid and leave the beets to ferment.

Fermented beets are perfect for making homemade red borscht.
