Recipe for pear jam with vanilla

Preparation:

Wash the pears, peel them, and remove the cores. Dice the flesh. Transfer to a pot, add sugar and lemon juice. If the pears are not very sweet, you can increase the amount of sugar. Split the vanilla bean lengthwise, scrape out the seeds, and add them to the fruit mixture along with the pod. Cook until the fruit breaks down and the mixture thickens. You can do this over several hours - all at once or in stages over 2-3 days. When the jam is sufficiently thick, remove the vanilla pod and pour the mixture into sterilized jars. Seal and pasteurize for 20-25 minutes.
