Preparation:
- In a pot, combine vinegar, honey, spring water, and salt.
- Bring to a boil and set aside to cool.
- Peel off the outer layer of the onions, slice them thinly, and transfer to a bowl.
- Pour boiling water over to remove bitterness. Then transfer to ice-cold water; this step will make it super crunchy.
- Add mustard seeds, allspice, juniper, bay leaf, the chilled onion to the jar, and pour in the brine.
- Insert the weight and screw the jar closed.
- After an hour it is ready to eat, and in the refrigerator it will keep for several weeks.
