Rolled pork loin with prunes from a ham cooker

Recipe for rolled pork loin with prunes, prepared in a ham cooker
Rinse the pork loin, pat dry, and butterfly it to form a rectangle. Pound it with a mallet to widen it, making it easier to roll later. Then rub the meat thoroughly with salt and spices on both sides. Sprinkle gelatin on the inside of the loin. Cut the prunes into smaller pieces and spread them evenly over the slab of meat. Roll the pork loin tightly into a roulade and place it in the bag previously inserted into the ham cooker. Close the ham cooker and install the thermometer. Poach in water at 70-80℃ until the inside of the loin reaches 63℃. Then remove the ham cooker from the water and allow it to cool. Next, place it in the refrigerator for a few hours. After that, all that remains is to savor your homemade pork loin with prunes.
