Preparation:
Rub the pork loin with salt and spices (you can marinate it a day in advance), then cut it in such a way that it can be rolled up (check to be sure). Place the tomatoes inside and roll it up again. Put the prepared meat into the ham cooker’s glass vessel, press it down with the plate, and fit the dedicated screw cap. Tighten well. There is a hole in the center of the cap – insert a thermometer into it. Insert the thermometer vertically so its probe is driven into the center of the meat. Monitoring the internal temperature this way will ensure the ideal texture of the meat. Place the ham cooker in a pot of water – add enough water to reach the level of the cap. The water temperature should not exceed 85°C. Cook until the internal temperature of the pork loin reaches 65°C. Then remove the ham cooker and let it cool. Once cooled, place the closed ham cooker in the refrigerator. After at least 4 hours of chilling, you can remove the meat from the vessel and enjoy the taste of your homemade cold cut.
You can store the finished rolled pork loin in the refrigerator in the ham cooker’s glass vessel – just close it with a suitable jar lid.
