Sugar-free sweet cherry jam
Sweet cherries are among the most valuable fruits of summer. They contain potassium, calcium, iron, magnesium, iodine, as well as B vitamins, beta-carotene, and large amounts of vitamin C. Composed of 80% water, they are wonderfully refreshing — no wonder we enjoy eating them on hot days. Few people, however, think of sealing their aroma and unique flavor in a jar. We remind you that it's worth doing! Taking a jar of homemade sweet cherry jam with a hint of cinnamon and cardamom from the pantry in winter will bring back the feel and taste of a real summer holiday, and toast, pancakes, and cakes with this addition will delight even the most discerning palates!

Recipe for sugar-free sweet cherry jam
Preparation:
- Wash and pit the sweet cherries. A cherry pitter will help.
- Transfer the cherries to a pot, season with salt, cinnamon, and cardamom.
- Add a small amount of water and simmer over low heat, stirring the jam continuously.
- When the fruit begins to break down and the mixture thickens, add the pectin, mix thoroughly, and cook for a few more minutes.
- Pour the hot jam into clean jars rinsed with hot water, set them upside down or pasteurize for 25 minutes.
Note! The final set will be visible only after about 24 hours, so to check the jam's consistency while cooking, you can perform the "cold plate test", that is, pour about 1 teaspoon of jam onto a well-chilled plate (previously placed in the freezer for several minutes) and leave it to cool, or put it in the refrigerator for 2 minutes.
