Recipe for beet greens soup
Preparation:
Peel, wash, and finely dice the potatoes, then sauté them in olive oil. Wash the young beets together with their leaves thoroughly, then cut off the leaves and chop them finely. Grate the beets. When the potatoes are sautéed, pour in the hot broth and cook for about 10 minutes, until the potatoes are almost tender. After 5 minutes, add the beets to the potatoes; after another 5 minutes, add the beet greens. Cook everything for 3 more minutes. Season with salt and pepper, add lemon juice, and finish with cream, or add it directly to the bowl when serving the soup. Serve with sliced hard-boiled egg and dill or parsley.
