Canned-style ham from a ham cooker

Homemade canned-style ham is the perfect choice for sandwiches. Hand-prepared, it differs significantly from its store-bought counterpart not only in taste. It is free from artificial additives and preservatives, which guarantees high quality and exceptional flavor. Its ingredient list is simple: just 3 ingredients — meat, gelatin and spices.

The naturally formed jelly adds delicacy to the canned-style ham. It’s an excellent dish for children and works great not only on sandwiches.

Recipe for homemade canned-style ham

Preparation:

Cut the ham into small pieces and grind them using a meat grinder with a medium plate (about 3–4 mm). Add salt, potassium nitrate (saltpetre) and other spices to the prepared meat. Then mix everything thoroughly and refrigerate for 24 hours. After this time, add the water and sprinkle in the gelatin. Knead the mixture well. Line the ham cooker with a bag, then fill it with the meat mixture. Close it and insert a thermometer to monitor the temperature inside the ham.

Place the ham cooker in water so that the water level is above the level of the meat. Poach, ensuring the water temperature does not exceed 80°C, and when the internal temperature of the meat reaches 65°C, finish cooking and set the ham cooker aside to cool.
