Recipe for spicy chicken breast with cranberries
Preparation:
Thoroughly rub the breasts with gyros seasoning, pepper, chili, salt, sweet paprika and basil (use twice as much seasoning as you would for roasting meat). Then leave the seasoned breasts in the refrigerator for 24 hours. The next day, soak the cranberries for 15 minutes in lukewarm water and rinse them thoroughly. Gently score the breasts so you can insert the cranberries into the meat; you can also place some cranberries loose between the breasts, which you will place whole into the ham cooker. Close the vessel and insert a thermometer into its lid. Put the whole thing into a pot of water and set to the lowest heat. When the internal temperature of the meat reaches 70°C, finish poaching and place the ham cooker in cold water. Once it cools, refrigerate the meat. The next day, the dish is ready to eat. To make it easier to remove the meat from the vessel, you can pour hot water over it.
