Recipe for cod from a ham cooker in the form of a fish loaf

Preparation:

Cut the fish into small pieces (so that they can be easily minced later using a meat grinder). Soak the roll in milk. Slice the onion and lightly sprinkle it with salt (to help it release its juices). Then arrange it over the fish. Leave the fish prepared this way at room temperature for 30 minutes. Next, grind the fish using the smallest plate on the grinder (you can do this twice); at the same time, grind half of the onion — use the portion that was previously placed on the fish.

While grinding, also add to the meat the breadcrumbs previously soaked in milk. Add a carrot grated on a coarse grater to the mixture, then add the seasonings, honey, finely chopped dill, and gelatin. Knead the mixture thoroughly; while kneading you can add about 2 tablespoons of milk (the mixture should be light and hold together well). Transfer the prepared fish mixture into the bag placed in the ham cooker, packing it down firmly as you fill it.

Close the ham cooker and place it in a pot. The water temperature during poaching should not exceed 80–90°C. The center of the loaf should reach 69°C. After that time, remove the ham cooker and let it cool. Once cooled, place it in the refrigerator for at least 5 hours to chill completely and allow the loaf to set.
