Mascarpone is very thick and creamy; it should have a uniform consistency and a slightly sweet, mild taste. Its main ingredient is high-fat cream, which makes the cheese quite rich. It's an ideal ingredient for many baked goods and desserts. Useful, for instance, when preparing the very popular Italian treat – tiramisu. It will also work as an addition to cheesecakes, and not only those. The internet is full of recipes for dishes using mascarpone. Let's get to it!

Recipe for homemade mascarpone-style cheese

Preparation:

Heat the cream in a water bath for 15 minutes to a temperature of 80°C. Add the lemon juice and stir, maintaining the temperature until the cream curdles. Remove from the heat. Cover the pot with a lid and leave to cool, stirring from time to time.


Transfer the thick, cooled mass to a colander lined with cheesecloth. Tie the corners of the cloth. Drain for 12 hours at a temperature of 10°C, turning occasionally.


Store the cheese in the refrigerator for no longer than a week.
