Recipe for homemade pâté with mushrooms

Preparation:

Cut the pork jowl into smaller pieces and cook in a small amount of water with allspice and a bay leaf. Dust the rinsed liver with flour and fry for 3 minutes in a pan with thinly sliced onion, season with salt and pepper, then let cool. Cut the remaining meat into large cubes. Peel the vegetables and cut them into pieces as well. Heat the olive oil in a pot, add the vegetables, bay leaves, allspice and pepper, and sauté for 3 minutes. Then add the meat to the vegetables and fry over high heat for a few more minutes. Pour in 700 ml water, add the stock cubes, dried mushrooms, marjoram and rosemary. Bring to a boil, then reduce the heat and simmer for about 1 hour, until the meat is tender. After this time, let everything cool, remove the mushrooms and cut them into thin strips. Put the cooked and cooled pork jowl, the liver, the meat with vegetables and the squeezed-out roll through a meat grinder. Transfer the mixture to a bowl, mix with the eggs, add the chopped mushrooms and season to taste with salt and pepper. Line a Roman baking dish with baking paper or grease and dust with breadcrumbs. Spoon the prepared mixture into the dish and place in the preheated oven. Bake for 45 minutes at 180°C.
