Jar meat - pork shoulder in aspic in a jar

Jars hide all sorts of things inside. In them we find spices, with salt and pepper being the obvious examples. They also serve as a stash for candy, cookies and breakfast cereals. In the summer, jars are filled with favorite vegetables and fruits, letting us enjoy their flavor in winter. 

Our grandmothers proved to us that they are also an ideal place for meat. The tasty treat known as jar meat is meat with aspic resembling a preserve. The texture of pork shoulder from a jar works great as a delicate homemade spreadable cold cut for sandwiches. Preparation: 

Cut the meat into large cubes, mix thoroughly with the seasoning (optionally add a pinch of salt to taste) and place it in a jar, filling about 3/4 of its capacity. Screw the lids on the jars, put them into a pot whose bottom you have previously lined with a cloth. This will prevent the jars from cracking as the bottom of the pot heats up. Then pour cold water into the pot (to just below the lids) and simmer for 3 h.

Remember to check the water level from time to time - if it drops significantly, top up with boiling water to just below the lids. Using cold water may cause the jars to crack. 

After 3 h, turn off the heat and let the jars cool down on their own. Once cooled, transfer them to the refrigerator for 24 h. After that, your jar meat is ready! 

The meat is perfect as a sandwich cold cut, or you can eat it hot, serving it as meat in its own juices.​
