Summer is, without a doubt, the time when we mostly think about lounging on deckchairs and sipping cold drinks. On hot days our appetite is much smaller, so the frequent dilemma is what to serve for dinner so the household will actually want to eat it. Hot, heavy dishes are certainly not a good idea, and even the iconic chicken broth won’t be appealing, not even on Sunday. If we also don’t have time for outdoor grilling, a great idea is a hearty, healthy soup with fresh vegetables, served cold. For inspiration for this type of dish, look to Eastern cuisine. Our idea for today is a delicious cold soup—not the traditional Lithuanian beet-based one, but the Russian version based on bread kvass, with the lovely name OKROSZKA!
On this occasion we recommend making your own bread kvass, which not only serves as the base for this delicious, intriguingly flavored soup, but is also a tasty, wonderfully thirst-quenching sparkling drink for hot days. This way, you can kill two birds with one stone by preparing both something to eat and something to drink. Highly recommended.
PREPARATION
Prepare the bread kvass 2–3 days in advance, following the instructions on the package.
After that time…
Pour 1.5 L of homemade bread kvass into a pot. Add cucumbers and radishes grated on a coarse grater, chopped dill and spring onions (with bulbs), and ham cut into large cubes. Add the sour cream and mustard, and season with salt and pepper to taste. For a more filling version - add hard-boiled eggs.
