Preparation:
Cut the meat into pieces about 5 cm in size and sprinkle it evenly with salt. Cover the meat and leave it in the refrigerator for 24 hours. After this time, grind the ham, shoulder, neck, jowl, and fatback through the finest plate. Grind the beef into a separate bowl and work it with 100 ml of cold water, then combine it with the remaining meat mixture, seasoning it and kneading the mixture with the rest of the cold water. Next, add the powdered milk to the mixture and blend everything into a smooth emulsion. Add extra salt or adjust the seasoning to taste, if needed. Place the prepared meat mixture in the refrigerator for 30 minutes. In the meantime, prepare the casings—rinse them well with lukewarm water and soak them. After 30 minutes, stuff the casings fairly tightly with the cold meat mixture, forming short thick wieners. The frankfurters can be lightly smoked to develop a nice color, and then poached in water at 75°C for 10 minutes.
