How to make a roulade in a ham cooker?
Preparation:
Mix the olive with the spices, to form a marinade. Cut the pork loin so as it can be unrolled and crushed with a mallet gently. Cut the breasts into 2 cm pieces. Cover the pork loin and the breasts well with the marinade, pour the rest of the marinade over the meat and leave it under cover in the fridge for a minimum of 2 hours. Next, beat the pork loin with a mallet, place the chicken breast parts on it and roll it into a roulade. The height of the roulade should be 2 cm lower than the height of the ham cooker.
Place the meat in the ham cooker. Close the vessel, insert the thermometer into the meat through the opening in the cooker lid, put the vessel in a pot of water (it may be boiling slightly). It is important that the water is above the level of meat in the ham cooker. When the meat reaches the temperature of 75 degrees, finish the scalding. Wait for the ham cooker to cool down (you can put it in cold water), then leave it in the fridge for a minimum of 4 hours. After this time, you can remove the roulade and enjoy its taste.
