Recipe for liver loaf from a ham cooker
Preparation:
Soak the roll in milk. Cut the liver into small pieces. Thoroughly mix the minced meat with the liver and roll, adding spices to taste and parsley. Place the mixture in a bag inside the ham cooker. Seal the ham cooker tightly and place it in a pot of water. The water temperature should be about 95 degrees, while the temperature of the meat mixture during poaching should reach about 70–85 degrees; then end the process. Then cool the ham cooker and keep it at 2–8 degrees for 12 hours. After this time, rinse the ham cooker with hot water and remove the loaf.
