Recipe for pickled cucumbers with asparagus
Preparation
Start by washing the cucumbers thoroughly and drying them. If you have young cucumbers, they will be just perfect. If they are thick, cut them in half lengthwise. Asparagus also needs to be washed. Trim off the woody ends. Next, prepare the pickling brine in a large pot by combining water, spirit vinegar, salt, sugar, mustard seeds, black peppercorns, and fennel seeds. Bring to a boil, then simmer for about 5 minutes. Add the cucumbers and asparagus to the boiling brine. Cook for 2-3 minutes, until the cucumbers and asparagus are slightly softened. Remember, we still want to keep the cucumbers crisp and the asparagus tender. Meanwhile, peel the garlic and slice it thinly. Add it to the pot with the cucumbers and asparagus. Stir everything together and leave to cool. Then carefully transfer them to a clean jar. We particularly recommend this lightweight, shatterproof. Importantly, you can easily fit a dedicated pressing weight. Thanks to it, you can be sure your preserves won't spoil. The weight is made of certified material approved for contact with food.
If you want to add a bit of heat, peel the horseradish and slice it thinly. Place a few slices on top in the jar.
Seal the jar carefully and place it in the refrigerator for at least 24 hours. This is the time needed for the flavors to meld and for the cucumbers to develop the right aroma.
Lightly salted cucumbers with asparagus are an excellent snack that will surely delight your palate. Crisp cucumbers, tender asparagus, and an aromatic marinade create an exceptional combination of flavors. You can serve them as a side to sandwiches and salads, or simply enjoy them on their own as a refreshing snack. Special tongs will help you retrieve the treats.
