Recipe for homemade ketchup
Preparation:
Cut the tomatoes into quarters and pass them through a food mill. Bring the resulting seedless pulp to a boil, then reduce the heat to the lowest setting and cook the tomatoes down. After reducing, you should end up with half the initial volume of pulp. The mixture should be thick and not runny. Achieving this consistency can take up to 4–5 hours. For the next step, finely chop the onion and sauté it in oil. To keep the onion from burning, sprinkle it with 1/3 teaspoon of sugar. When the onion browns, add 1/3 cup of water and the habanero chili. Cook until the water has completely evaporated. Combine the tomatoes with the onion and the other seasonings. Blend the mixture, taste, and adjust the seasoning to your liking. Transfer the finished ketchup to jars, screw on the lids, and pasteurize them for half an hour.
Recipe for homemade mustard
Preparation:
Crush the mustard seeds and coriander seeds in a mortar. Cover them with vinegar, water and optionally wine. Leave for 24 hours. Then add the honey and other spices. Transfer everything to a container and blend to the consistency you prefer. After blending, stir the mixture thoroughly once more to better combine the ingredients, then transfer to jars. If the mustard turns out too thick while blending, add a little cold water.
Recipe for homemade mayonnaise
Preparation:
Prepare a tall, narrow container. Place the egg yolks, mustard, seasonings, vinegar and two tablespoons of oil in it. Blend or process until smooth. Then, add the remaining oil in small portions while blending continuously. When the mayonnaise achieves a "smooth" taste, you can transfer it to jars.
