Ketchup, mayonnaise and mustard are the three most famous sauces in Polish cuisine. If you care for the quality of ingredients used while cooking, today we will share with you three proved recipes for healthy and natural sauces. Homemade sweet ketchup? Or maybe spicy mustard? You will surely enjoy the delicate homemade mayonnaise. Here are the recipes for homemade sauces – delicious!

Recipe for homemade ketchup

Preparation:

Cut the tomatoes in quarters and puree them using a grater. Bring the seedless pulp obtained into boil and then minimise heat and reduce the tomatoes. As a result of that, the final pulp volume should be half of the initial one. The pulp should be thick and not runny. It may take even 4-5 hours to obtain such texture. In the next stage of ketchup preparation, chop the onion finely and fry it on oil. In order for the onion not to burn, sprinkle it with 1/3 tsp sugar. Once the onion browns, add 1/3 glass water and a Habanero pepper to it. Keep everything on heat until water evaporates completely. Combine the tomatoes with onion and other seasonings. Blend the whole mass, taste it and, if necessary, complete it with seasonings to taste. Put the finished ketchup to jars, close them and pasteurise them for half an hour.

Recipe for homemade mustard

Preparation:

Crush the mustard and coriander seeds in a mortar. Pour vinegar, water and, optionally, wine over them. Leave this for a day. Next, add honey and other seasonings. Move everything to a container and blend it in order to obtain the texture you like. After blending, stir the whole mass thoroughly once again so that the ingredients can combine better and then move it to jars. If the mustard turns out too thick while blending, you can add some cold water to it.

Recipe for homemade mayonnaise

Preparation:

Prepare a tall, narrow container. Put egg yolks, mustard, seasonings, vinegar and two tablespoons of oil into it. Blend everything well into a smooth mass. Then, in small portions, add the remaining oil to the mass created, blending it all the time. Once the mayonnaise is ‘smooth’ when tasted, you can move it to jars.
