Recipe for lentil sandwich spread
Preparation:
Rinse the lentils in a strainer, transfer them to a pot and pour water over them. Boil them with a small amount of salt. After about 10 minutes, when the lentils start to break down, turn off the heat and leave them covered for another 10 minutes. Pour the rapeseed oil onto the frying pan. Fry the onion in it, add salt and freshly ground black pepper. Cut the tomatoes into smaller pieces, add to the onions and fry for a while. If the cooked lentils are too watery, drain them in a strainer. Transfer them to a pot, add onions, tomatoes and 1/3 jar of tomato paste. Season with: a pinch of sugar, 1 tsp curry, 1 tsp turmeric, 1 tsp sweet paprika and 1 tsp hot paprika. Add smoked paprika and cayenne pepper as desired. Stir the whole mixture thoroughly and let it cool down. If the spread is too dry, add a little oil from dried tomatoes or olive oil to it. Then transfer the spread to the jars.
