Recipe for chicken and minced meat terrine
Preparation:
Debone the thighs, i.e., separate the meat from the bones, and wash thoroughly. Leave the skin on two pieces of meat. Season each piece evenly with spices and leave for half an hour. In the meantime, season the minced meat as well. Then, in the ham cooker, arrange alternating layers: thigh meat - minced - thigh - minced...
Place the first piece of thigh skin-side down, and the last one skin-side up. Close the ham cooker and place it in a pot with water. The water temperature should not exceed 90°C, while during poaching bring the internal temperature of the meat mass to 70°C and finish the process. The poaching time is about 1.5 h. Then cool the ham cooker and leave it in the refrigerator for 12 hours. After this time, pour hot water over the ham cooker and remove the terrine.
