Recipe for chicken thighs with cranberries - from a ham cooker 

Preparation:

Cut the deboned chicken thighs into pieces (about 5-8 cm) and gently pound them with a meat mallet (just to slightly break down their structure).
 Next, sprinkle the meat with gelatin, add the seasonings, salt, crushed garlic, and cold water. Mix everything thoroughly and cover, e.g., with cling film. Leave the meat to marinate overnight or for at least a few hours in the fridge. 
After removing it from the fridge, add the previously scalded cranberries and mix everything again. Place the prepared meat in the ham cooker; for convenience, use a bag. 
After closing the ham cooker, insert a thermometer into the meat and poach everything in water. The water temperature should not exceed 80-90°C. You can consider poaching finished when the internal temperature of the meat reaches 70°C. 
When that happens, remove the ham cooker and let it cool down on its own, then place it in the fridge so the meat block sets completely (preferably overnight). The next day, it is ready to eat.
