Kebab is one of the most popular street-food dishes in Poland. It’s hard to resist juicy meat fragrant with Middle Eastern spices. This recipe will show you how to prepare exceptionally tender and flavorful kebab meat at home using a ham cooker. Thanks to the aromatic marinade and precise thermal processing, you’ll achieve a result that easily matches the quality of good kebab shops and often even surpasses it.
Homemade chicken kebab recipe
Preparation:
- Trim the chicken thigh meat and cut it into large pieces.
- In a bowl, mix the olive oil, yogurt, lemon juice, and all the spices.
- Add the meat to the marinade and mix thoroughly.
- Refrigerate for at least 3 hours, preferably overnight.
- Fill the ham cooker with the meat, pressing firmly so there are no empty spaces.
- Insert a thermometer and cook until the internal temperature of the meat reaches 72°C.
- After cooking, remove the ham cooker, let it cool completely, then refrigerate for a few hours.
- Slice the meat thinly (optionally sear to get charred edges).
- Serve in your favorite flatbread with vegetables and sauce.
