Gingerbread dough is simple to make — however, you should start working on it in advance, as both the cookies and the traditional Polish gingerbread cake require the dough to rest for up to 4 weeks! With just a week left until Christmas — we have a lifesaver for you! A last-minute quick gingerbread cookie recipe you can make even the day before Christmas Eve! These cookies take about 20 minutes to prepare and you can eat them right away — no need to wait for them to soften!

Recipe for quick gingerbread cookies

Preparation

Sift the flour into a bowl. Add the remaining ingredients, mix thoroughly, and knead into a dough. Dust your work surface with flour and roll out the dough to a thickness of about 3 mm. Cut out cookies in your favorite shapes. Line a baking tray with parchment paper and arrange the cookies on it. Preheat the oven to 180°C. Bake the cookies for about 8-10 minutes. Let them cool completely and decorate as you like. You can use chocolate glaze, colorful ready-made icing pens, or icing you make yourself.

How to make icing for gingerbread cookies?

Heat the juice and water in a ratio of 1 tablespoon of water to 1 tablespoon of juice. When it’s warm, gradually add powdered sugar — stirring constantly until you reach the desired icing consistency. Then pour the icing into a piping bag fitted with a fine tip and decorate the cookies as you like.
