Recipe for spinach rolls / bread
Preparation:
Pour 50 ml of water over the yeast and leave for 10 minutes to hydrate. Place the spinach in a sieve to thaw and remove excess water. Then blend it into a smooth purée. Put the flour in a bowl, add the salt, sugar, oil, yeast, and spinach. Add 300 ml of water to start, and if needed while kneading, add a little more water. Knead the dough until smooth and elastic—fairly soft, but coming away from your hands. Leave the kneaded dough to rise for an hour in a warm place. After this time, transfer the dough to a Roman pot previously greased with butter and generously dusted with flour. Leave it to rise for another 20–30 minutes at room temperature. Preheat the oven to 80–100 °C and place the pot with the dough inside. After putting the pot in the oven, raise the temperature to 220 °C. Bake the bread for about 1 hour, until the crust is crisp and lightly charred.
Note! You can also make rolls from this bread dough. Simply shape it into balls of the desired size, slash them down the center with a knife, and bake on a flour-dusted baking sheet for about 25–30 minutes.
