It’s a traditional Warsaw delicacy, passed down from generation to generation, which you can buy at stalls by cemeteries on All Saints’ Day. Pańska Skórka owes its vivid color to raspberry juice, which is an indispensable ingredient in the recipe. The finished candy is usually cut into large cubes. Its sweet taste eases the melancholy that accompanies visits to cemeteries, melting away with its sweetness the sorrow and longing for those who are no longer among us. Recipe for Pańska Skórka

Preparation:

Pour 1 cup of sugar into a small saucepan, add ½ cup of light honey and 1/2 cup of water. Caramelize to 160℃. Beat the egg whites to stiff peaks, add the vanilla sugar, then the previously prepared caramel, as well as lemon juice and raspberry syrup. Gently mix everything together. Pour the thickening mixture into a paper-lined pan. Once the mixture cools, place it in the refrigerator overnight. In the morning, cut the finished Pańska Skórka into thick squares.
