A pretzel is a baked product with a characteristic shape reminiscent of a figure eight. It’s a type of bread that not only looks interesting but also tastes great on its own or with toppings. There’s nothing to stop you from serving pretzels as part of breakfast or another meal, or treating them as a beer snack. It’s no coincidence that, alongside beer and “wursts,” pretzels are the main stars of Bavaria’s Oktoberfest beer festival.


Preparation:

Put the flour, yeast, salt, and sugar into a bowl. Add the water and knead the dough until smooth and elastic. Cover the bowl with a cotton cloth and set aside in a warm place for an hour, until the dough doubles in volume. 
Briefly knead the risen dough again, then shape it into a log and divide it into 12 pieces. Roll each piece into a rope about 30 cm long, thicker in the middle and thinner at the ends. Shape the ropes into pretzels (as shown in the photos).

Next, pour a liter of water into a pot, and when it comes to a boil, slowly add the baking soda (caution — the solution will foam). Cook over low heat, adding the pretzels one at a time for about 20–30 seconds. 
Remove the pretzels, drain off the water, place them on a baking sheet lined with parchment paper, brush with beaten egg and — if you like — sprinkle with coarse salt, sesame seeds, or poppy seeds. 
Bake in an oven preheated to 230⁰C, on the middle rack, for 12–15 minutes, until deep golden brown. 

As you get started, you can, for example, check whether your favorite homemade Coopers beer is already chilling in the fridge;)
