Skyr is an Icelandic-style yogurt that has stormed onto store refrigerator shelves and stolen our hearts. It’s low in calories, easy to digest, and high in calcium. It tastes great on its own or with fruit. Check out our recipe and make skyr at home.
Skyr recipe
Preparation:
- Heat the milk to 38°C, add calcium chloride dissolved in a small amount of lukewarm water, and mix.
- Add yogurt cultures dissolved in a small amount of lukewarm water, and mix.
- Repeat the same step for the rennet; add to the milk the appropriate amount, previously dissolved in a small amount of lukewarm water.
- Leave the milk in a warm place for 24 hours.
- Transfer the curd to cheesecloth and drain for about 6 hours.
- After this time, transfer skyr to the refrigerator.
- Skyr tastes great on its own as well as with your favorite fruit.
