Smoked chicken recipe - with roasting
Preparation:
In a small bowl, mix all the spices and add approx. 20 g of salt to the blend.
From the remaining salt, prepare a brine solution by dissolving it in approx. 50–80 ml of water, then inject the chicken with it in the thickest parts (breasts and thighs).
Rub the chicken thoroughly with the previously prepared spice blend. Then hang it for about 1–2 hours at room temperature, preferably above a fan, to dry it slightly.
In the meantime, prepare the smoker. For smoking, use 2 handfuls of poultry wood chips (approx. 50–60 g).
Place the tray with wood chips directly on the heating element (under the guide rail). After placing the chicken in the smoker, set the knob to 1 and wait for the smoking to start. The process should begin after about 10 minutes. Initially smoke the chicken at up to 70°C for 30 minutes, then turn the smoker’s knob all the way up to level 5 and leave the poultry to roast.
When the outside temperature is around 5°C, the smoker reaches up to 130°C - under such conditions the chicken will be ready after 2 hours. If you smoke on warmer days, the internal temperature of the smoker will automatically increase, which will shorten the roasting time.
It’s best to monitor the process with a thermometer, inserting it into the thickest part of the chicken. If the internal temperature of the meat exceeds 75°C, you can consider the roasting finished.
You can serve the chicken both as a dinner meat and as an accompaniment to homemade, freshly baked bread! The chicken pairs great with homemade sauces, for which you can find recipes here.
