Spicy ham from a ham cooker
Ham is a very popular and well-liked type of cold cut. Unfortunately, we often have doubts about the quality of store-bought cold cuts, which contain lots of unnecessary and unhealthy additives.

How to make ham in a ham cooker
Preparation:
Prepare the brine by mixing water with saltpeter and salt.
Thoroughly inject the cleaned meat with part of the prepared brine and leave it to cure in the remaining brine for 4 days in the refrigerator. The ham should be completely submerged in the brine.
After this time, remove the meat, pat it dry with a paper towel and wrap it in the spiced casing. The casing should adhere to the meat with the spice-coated side. If necessary, trim the casing to fit the shape of the meat.
Place the ham in the ham cooker, seal it tightly and put it into a pot of water.
When using a ham cooker with a water jacket, maintain the required water level for poaching - it is marked on the inside of the pot.
Place one thermometer in the water and the other inside the meat in the ham cooker. Poach the ham until the internal temperature of the meat reaches 68℃.
After that, remove the ham cooker from the water and let it cool, then place it in the refrigerator (overnight) so the contents set properly.
The next day, remove the contents from the ham cooker. To make this easier, pour hot water over the ham cooker, making sure it does not get inside. Remove the ham and unwrap it from the casing. The spices will remain on the meat.
