Warming tomato juice

The tomato is a controversial vegetable that some classify as… a fruit. Regardless of how you classify it, the tomato is a true vitamin powerhouse worth taking advantage of. Tomatoes contain vitamin A, B vitamins (B1, B2, B3, B6 and B9), vitamins C, E and K, as well as other valuable nutrients: zinc, fluoride, phosphorus, iodine, cobalt, magnesium, manganese, copper, potassium, sodium, calcium, and iron. Additionally, they contain lycopene – an antioxidant that reduces the risk of coronary heart disease and cancers. Also significant, especially for those watching their figure, is the low calorie content of tomatoes. Their excellent flavor also makes them a frequently used ingredient in many dishes.

Preparation:

Run the tomatoes through a tomato strainer. Pour the resulting purée into a pot, add diced celery stalks and peeled garlic cloves, then blend everything until smooth. 
Bring to a boil and season to taste, then pour hot into bottles or jars and pasteurize to extend the drink's shelf life. 
The juice can be served either cold or hot.
