Yeasted onion rolls — a perfect snack for a picnic, a get-together with friends, cheering on sports games, or simply to take with you — wherever you like. Delicious, fluffy yeast dough combined with aromatic onion and mushrooms is a fantastic companion even to cold drinks on hot days. But that’s just one of the possibilities — you can prepare this dish any time of year. It’s easy to make, and thanks to the availability of the ingredients you can enjoy it both in summer, with a pint of cold beer in hand, and in winter, with mulled wine or a glass of red wine!

Knead the flour, yeast, milk, 1 egg and 1 egg yolk, and 40 ml of oil in a bowl using a stand mixer or by hand. Form a ball and leave it in the bowl covered with a cloth, in a warm place, for an hour, until the dough doubles in size. Finely chop the onions, clean the mushrooms and dice them finely – sauté everything in 10 ml of oil, adding pepper, salt, and your favorite herbs. When the onion is golden – remove the pan from the heat and let it cool.
Divide the risen dough into 6 parts, shape each into a disc with an indentation in the center. Place the prepared buns on a baking sheet lined with parchment paper, brush with egg white, and leave in a warm place to rise. Place the onion and mushrooms in the center of each risen bun. Sprinkle the top with poppy seeds. Preheat the oven to 180 degrees and bake the rolls for 20 minutes.
In summer, serve them with beer, cider, or cold lemonade.
