Recipe for spelt crescent rolls with plum butter

Preparation:

Add sugar and yeast to the milk and mix well. Then add 1 egg, the flour, a pinch of salt, and melted, cooled butter. Knead the dough by hand or using a stand mixer for about 10–15 minutes, until it no longer sticks to your hand. Cover and set aside to rise for about an hour. It should double in volume. Roll the dough out into a circle. Divide into 8 large triangles. Place a teaspoon or two of thick preserves (e.g., plum) on each. Roll up and place seam side down on a baking sheet lined with parchment paper. Cover with a kitchen towel while the oven preheats. Before baking, brush the rolls with a beaten egg. Bake for about 20–25 minutes at 180 degrees.
