Preparation:
Gently wash freshly picked (or purchased) blackberries and drain them in a sieve. Once the water has drained off, layer them in a container, sprinkling each layer with sugar. Leave the fruit like this for a few hours, preferably overnight in the refrigerator. When the blackberries release their juice, transfer them together with the juice into sterilized jars, seal, and pasteurize for 1 hour. After this time, the fruit is ready to age in your home pantry!
