Recipe for buckwheat-rice bread in a pot
Preparation:
In a bowl, combine buckwheat and rice flour, add dry yeast, sugar, salt, flaxseed, and the herb blend. Then add water at 35°C and olive oil. Mix all the ingredients thoroughly with a wooden spoon. Leave the mixture under a cloth for 20 minutes to rise for the first time. In the meantime, prepare a pot or a Roman pot. Soak it in water for 15 minutes, then thoroughly grease the inside with butter. Place the prepared dish in a cold oven and leave it there until it reaches 150°C (to temper the Roman pot). Remove the dish and dust it with flour. Gently stir the risen dough and transfer it to the prepared dish. Cover and leave it at room temperature for 20 minutes to rise again. After this time, sprinkle the risen dough with bran, place it in an oven preheated to 230°C, and bake for 15 minutes. Then reduce the temperature to 210°C and bake for another 30-40 minutes. The bread should be nicely browned by then. To make sure it's baked through, you can tap it—the bread should sound 'hollow'.
