Pumpkin soup recipe
Preparation:
Peel the pumpkin, scoop out the stringy pulp, wash and cut into pieces. Save the cleaned seeds for later.
Slice the onion and sauté until nicely translucent and lightly browned. In the meantime prepare the broth.
Then cook the pumpkin together with the sautéed onion in the broth, and when it softens, season everything with the spices and press the garlic into the pot. While the pumpkin is simmering in the broth, prepare the seeds by roasting them in the oven. At the end of cooking, blend all the ingredients thoroughly. Before serving, add chopped parsley and sprinkle with the previously toasted pumpkin seeds.
