Creamy Spinach Soup Recipe

Preparation:

Finely dice the onion and leek, then saute them in a pan with 2 tablespoons of butter until translucent. While frying, lightly sprinkle with sugar so the onion doesn’t burn but only browns. Add the sauteed onion and the peeled, diced potatoes to the previously prepared vegetable broth. Cook for about 15 minutes, until the potatoes are tender but not falling apart. Then add the thawed and squeezed spinach and the garlic pressed through a garlic press to the soup, and cook for another 5 minutes, until the potatoes are fully tender. Next, blend the soup with the cream. If the consistency is too thick, you can thin the soup a little. Before serving, sprinkle the soup with kale chips, parsley, or serve with croutons.
