Preparation:
Prepare the brine — for 1 L of water add 1.5 tablespoons of salt (preferably non-iodized). Wash the radishes thoroughly and trim the ends. Pack them fairly tightly into a jar together with horseradish, dill, garlic, bay leaves and the remaining spices. Add the honey and the hot chili pepper. Let the previously prepared brine cool and pour it into the jars so that the radishes are completely covered with brine. After 24 hours, fermentation should begin, so it’s best to place the jars on a tray. Over the next 2–4 days gently release the gas by loosening the jar lid so that the brine doesn’t escape from the jar.
