Ideal for summer get-togethers, garden parties, or a quick alfresco lunch. It’s simple to prepare, and the result surprises with bold flavor.
Recipe for tortillas with smoked salmon and broccoli
Preparation:
- Prepare the broccoli—divide it into florets and sauté in butter until tender or al dente, seasoning lightly with salt and a pinch of sugar to enhance the flavor.
- Cut the salmon and mold-ripened cheese into smaller pieces. Combine with the broccoli in a bowl.
- Add a tablespoon of plain yogurt and the spices: pepper, chili, wild garlic. Mix everything thoroughly.
- Fill the tortillas with the prepared filling, folding them into “pockets” or “envelopes”.
- Preheat the gas grill to about 150°C. Place the tortillas on the grate—preferably on the upper rack.
- Grill for a few minutes on each side until the tortillas are golden and the filling is gently warmed through.
