Tortillas with spinach and feta are a classic Mediterranean-inspired combination that never goes out of style. Lightly toasted on a gas grill, they gain exceptional aroma and crispness. This recipe is an ideal option for a quick vegetarian meal or snack. The simple ingredients and bold flavor make them hard to resist.

Recipe for grilled tortillas with spinach and feta

Preparation: 

  1. Thaw the spinach in a pan with the butter. Sauté until heated through and the excess water evaporates.
  2. Add the crumbled feta and mix thoroughly with the spinach. Cook until the cheese partially melts.
  3. Press 5 garlic cloves through a garlic press and add to the mixture. Season with salt and pepper to taste.
  4. Cook the filling for another 2–3 minutes over low heat.
  5. Spoon the warm filling onto the tortillas, folding them into pockets or envelope shapes.
  6. Preheat the gas grill to about 150°C. Place the tortillas on the grate (preferably on the upper rack).
  7. Grill for a few minutes on each side until lightly golden and crisp.
