Preparing the dough (serves 4):

Add the flour and salt to a bowl. Make a well in the center of the mound, crack in the egg and add the oil. Slowly mix everything with a fork. Then add hot water. Finish mixing when the egg and flour are well combined and the dough has a smooth consistency. If the dough is too sticky, add a little flour. If it is too dry, add a little water. Lightly flour the countertop and shape the dough into a ball. Cover the prepared dough with a kitchen towel and leave it for a few minutes. Set the pasta machine’s thickness adjustment knob to position 9. Pass the dough through the rollers.

Fold the rolled-out dough in half and dust the inside with flour. If the dough is moist, dust it with flour once more. Then proceed to cutting the pasta. Any dough not being used at the moment should be covered with a towel so it doesn’t dry out. To prepare the machine, remove the crank (part 6) from the machine and insert it into the selected roller opening of the attachment (part 4). Cut the dough with the selected roller, slowly turning the handle. Leave the pasta for 5 minutes to dry slightly, then cook.
