Preparation:
Soak 500g of dried chickpeas overnight in water (the chickpeas will significantly increase their volume). The next day, drain the chickpeas, transfer the soaked chickpeas to a pressure cooker and add 2 L of water. From the moment the pressure is reached, cook the chickpeas for another 20 minutes. Then drain them in a sieve. Reserve the cooking water—it will come in handy when making hummus :)
Consider how many flavor variations you want to obtain and divide the amount of chickpeas accordingly. Then transfer them to the blender jar, add the appropriate ingredients and blend until smooth. If the consistency is too thick, gradually add more water. If it’s too thin, add more chickpeas. Transfer the finished spread into jars and serve with raw vegetables cut into sticks or with fresh bread.
