In Poland, Easter is usually celebrated traditionally—with żurek, white sausage, and eggs. However, the Easter menu does not look the same in every country. Today we will take a closer look at Italy and its sweet approach to life. Traditional Italian Easter bread is nothing more than a combination of hard-boiled eggs with sweet brioche dough, shaped into braided wreaths and topped with colorful sprinkles. Sound intriguing? It is — because the sweet roll contains a baked, shell-on egg inside! To give the dish a special look, you can dye the eggs beforehand. We have shared ways to achieve colorful eggshells naturally here. Today, we will reveal a recipe for this delicious, melt-in-your-mouth, delicate treat straight from Italy!

Recipe for Italian Easter breads

Preparation: 

Before you start, all the ingredients should come to room temperature.

Put the flour, salt, and powdered sugar (depending on how sweet you want the breads to be) into a bowl and mix everything. Make a well in the center and pour in the milk warmed to 35 degrees C and add the yeast. Add two lightly beaten eggs. Knead thoroughly with dough hooks. Cover the bowl with cling film or a cloth and leave to rise for 2 hours, briefly kneading the dough by hand every 30 minutes. After this time, add the butter to the dough and knead again.

If the dough is too sticky — you can add a little flour. The dough should be sticky but pull away from the sides of the bowl — mixing should take you about 5 minutes. Cover the bowl again and place the dough in the refrigerator for 1–2 hours. After that, turn the dough out of the bowl onto a floured pastry board. Divide it into 4 parts, and then divide each of those in half. From two pieces, form 2 long ropes and braid them into round breads. Transfer them to a baking sheet lined with parchment paper and leave to rise for 1–2 hours. When the breads have doubled in volume, preheat the oven to 200 degrees C. Mix the egg with a tablespoon of flour and brush the breads with it, then sprinkle with colorful sprinkles. Place a previously dyed, raw egg in the center of each bread. Bake for 20 minutes.
