Mirabelles, small and juicy fruits, are an excellent ingredient for preparing a unique liqueur. Their intense flavor and delicate sweetness pair perfectly with alcohol, creating a distinctive drink with an unmistakable character. Mirabelle plum liqueur is a combination of nature and tradition that will take you on a journey through the flavors of a summer garden. All it takes is a little patience.
Recipe for Mirabelle Plum Liqueur
Preparation
It's best to collect ripe mirabelles from the ground or those that fall after shaking the tree.
Rinse the fruit in water, do not pit, then pour into a jar. A lightweight shatterproof jar, safe and convenient, will be best.
Add 60-65% alcohol* in an amount that covers the fruit, max. up to about 5 cm above them.

Leave the jar at room temperature for about 3 months.
After this time, drain off the liquid and cover the fruit with sugar.
After shaking the jar, the sugar should coat all the fruit. Remember, you can always sweeten the liqueur later.
Leave the fruit in sugar for another 2-3 months, until a significant amount of juice is released.
Then combine the two infusions: the one obtained from macerating the fruit with alcohol and the one with sugar. You can press the fruit with a press.
Leave the mixture for at least a week.
Then adjust the taste if needed. You can sweeten the liqueur or dilute it with boiled water or juice.
Leave the drink to clarify. To speed up the process, you can use a filter bag for liqueurs.
