The season for summer fruit is the best time to bake delicious cakes. Below we have a suggestion for you on how to use seasonal fruit as an addition to a yeast cake. In May and June these can be strawberries, and later in the summer cherries, plums or pears.
No matter what you decide to enrich your cake with, be sure to try this recipe. It will change your mind about the difficulty of making a yeast cake, if—like we used to—you’ve associated this bake with tedious kneading…
This is the simplest yeast cake in the world. Be sure to try it!
Preparation:
Use ingredients at room temperature. Rehydrate the yeast in the milk beforehand. Mix all the ingredients in a bowl except the fruit (you can do the mixing with a spoon). Then cover the bowl with a cloth and set it in a warm place for one hour to rise.
Mix the crumble topping ingredients together and knead into a uniform mixture.
Turn out the risen dough onto a buttered baking sheet, arrange strawberry quarters or slices on top, and sprinkle with the crumble.
Place in an oven preheated to 60oC for 15 minutes, then increase the temperature to 180oC and bake for another 60 minutes.
Enjoy!
