Preparation

Wash the plums, pit them, and cut them in halves. The best ones for this are very ripe, soft, and already slightly wrinkled. Mix the plums with sugar and set aside for about 2 hours. When the fruit releases juice, place it in a wide, heavy-bottomed pot and begin to cook it down slowly, uncovered, over low heat, stirring frequently for about 3–4 hours. Transfer the hot plum butter to jars, seal, and pasteurize for 20–30 minutes.
