Preparation:

Note! The tastiest rosehip preserve turns out best when the fruit is frozen beforehand. Before you start making the preserve, thaw and wash the fruit. If using fresh fruit - wash and dry them. Remove any remaining flower ends from the fruit, then cut each one in half and remove the seeds. You can also lightly "scrape" the fine fuzz from the skin of each fruit with a knife. Cook the fruit with 150 g sugar, the juice of 1/2 lemon and half of the vanilla sugar, adding a little water, until the rose hips turn translucent. This will take 10-15 minutes. Turn off the heat and set the fruit aside for 24 hours. Then add the rest of the sugar, lemon juice and vanilla sugar and cook over low heat, stirring constantly, until the preserve thickens. Transfer the hot mixture to sterilized jars - seal tightly and turn upside down to cool. You can also pasteurize the jars.
