Recipe for a traditional sour rye starter for żur
Preparation:
Pour the flour into a 1-liter jar or a stoneware pot. Then gradually pour in the water, stirring briskly to prevent lumps from forming.
After adding the bay leaves, allspice, pepper, and garlic, stir everything together.
Cover the jar with a linen cloth or cheesecloth and set it in a warm place for about 5 days. It is important not to seal the starter tightly while it is fermenting, because fermentation occurs and gases build up.
Another important point is stirring the starter with a wooden spoon while it ferments; this helps eliminate air bubbles that form in it.
After 5 days, you can use the ready starter to cook żurek, or screw the lid on and refrigerate the jar. You can store it for about 2 weeks.
