Spinach pasta recipe
Preparation:
If the spinach was frozen, cook off the excess moisture so that you end up with 150 grams of spinach. Then blend it well together with the eggs into a smooth mixture. Add salt, oil, and the spinach mixture to the flour, and then hot water. The order matters here—the water added at the end lets you control the dough’s texture. Knead everything until you obtain a smooth, elastic dough. Next, cut the dough into several portions and roll it out (by hand or with a pasta machine) to your desired thickness. Then cut the dough into pasta of your desired width or shape. Leave for 30 minutes in a well-ventilated place to dry slightly. Cook the pasta over low heat. You’ll get it al dente after just 3–4 minutes. We suggest serving the green pasta with homemade curd cheese and a topping of onion and bacon.
